Sambal matah is een rauwe Balinese sambal met kleine Thaise sjalotjes, gember en kaffirlimoen. Ga echt op zoek naar die kleine kaffirlimoen, want daarmee maak je deze sambal echt next level exotisch. Het is zeg maar het klassieke begeleidende uitje, maar dan spicy, fris en aromatisch. Geknipt voor bij vette haring. Helemaal feestelijk als er Hollandse nieuwe zijn. Fusion in optima forma, al zeg ik het zelf. Serveer dit als hapje of als voorgerecht.
