Broccoli mallung
Simple Too, p. 215
Mallung is a Sri Lankan dish of quickly cooked greens. So quick, so easy and – thanks largely to all the coconut that’s added – so delicious. Charring the broccoli in a pan with some coconut oil adds the kind of smokiness that broccoli thrives on. It’s good warm or at room temperature as a side but can also be the main event, served with a bowl of rice. Playing around: A more robust leafy green, such as kale or cavolo nero, roughly chopped, also works really well.
Ingredients
- 100g frozen shredded coconut, defrosted (we like shana) or fresh coconut, grated
- 1 small red onion, thinly sliced (120g)
- 1 bird’s eye (or regular red or green) chilli, seeds removed and finely sliced
- 1 garlic clove, peeled
- 15 fresh curry leaves
- 1 tsp ground turmeric
- 1 lime, ½ tsp finely grated zest, 1 tbsp juice
- 3 tbsp coconut oil
- 1 broccoli head, florets and stem chopped into small bite-size pieces (350g)
- 20g coriander leaves, roughly chopped
- Fine sea salt
