Thosai or dosa are thin pancakes made with a fermented rice and lentil batter. The texture is crispy on the outside but soft on the inside, similar to a French crêpe. They are best served simply with a dal and Coconut chutney (see page 180). You will need to start this recipe a day or two ahead to allow for soaking and fermenting time. As most Indians in Malaysia are originally from South India, this has become a popular breakfast and brunch dish for Penangites.

  • Urad dal
  • Long-grain rice
  • Cooked long-grain rice
  • Salt
  • Vegetable oil
