Lime and yuzu cream with sesame brittle

For anyone who knows and loves the sweet and salty cheesecake from Simple, consider this the sequel. It’s sweet and salty – welcomingly sour as well, thanks to the yuzu – and, as with the first recipe, a dinner party dessert whose elements can all be made a day or two ahead. Ingredients note: Yuzu is a Japanese citrus fruit with an intensely aromatic fragrance and sharp, yet complex, flavour – a little goes a long way. You can easily find it online and in well-stocked supermarkets. Equal amounts of lemon and lime juice work well as a substitute.
Ingredients
- Cheesecake cream
- 125g cream cheese
- 250ml double cream
- 75g caster sugar
- 1 tsp grated lime zest
- 1 tsp vanilla bean paste or extract
- Yuzu syrup
- 100ml yuzu juice (or yuzu citrus seasoning – we like yutaka)
- 25ml lime juice (from 1–2 limes)
- 60g caster sugar
- Sesame brittle
- 2 tbsp caster sugar
- 1 tbsp double cream
- 1 tsp coconut oil
- 2 tbsp white or black sesame seeds (or a mix of both)
- 1 tbsp desiccated coconut
- ⅛ tsp flaked sea salt
