Banana eton mess

Ingrediënten

• 125g egg whites (approx. 4 large eggs)
• 125g white caster sugar
• 125g icing sugar
• 100g whole blanched hazelnuts
• 100g unrefined caster sugar
• Pinch of salt
• 30g cold tap water
• 250g unrefined caster sugar
• 6 bananas, peeled
• 25g rum
• Juice of 1 lime
• 300g double cream
• Juice of 4 limes
• 2 bananas, peeled, sliced into quarters lengthways and roughly chopped
• Finely grated zest of 2 limes
• Approximately 20g of the hazelnut brittle pieces
