chilli cheese toast

This sounds very Western, but it’s very Indian too. Indians eat this when in need of a little comfort. It is particularly delicious with a cold Kingfisher at Leopold’s in Colaba. In Bombay your chilli cheese toast would invariably be made with Amul, the ubiquitous Indian dairy brand. Their famous hand-drawn ads feature the Amul “moppet” (a national icon) accompanied by clever, topical puns. For us Indians, Amul tastes like home. We use mature Cheddar instead of processed Amul cheese, but if you can get hold of the real thing, it will make this dish taste more authentic.

Ingredients

  • Mature cheddar
  • White bloomer or sourdough or brioche
  • Spring onions
  • Green chilli
  • Black pepper
