Menemen is a Turkish-style breakfast dish: scrambled eggs, spices, tomatoes. Simple! It’s the most comforting of all ways to start – or end – the day. The key is to add the eggs off the heat, so that they cook gently in the residual warmth of the pan. Serve with buttered toast or a leafy salad with slices of avocado.

Ingredients

  • 4 eggs
  • 3 tbsp olive oil
  • 1 onion, finely chopped (160g)
  • 3 garlic cloves, crushed
  • 1 tsp cumin seeds
  • ½ tsp aleppo chilli flakes
  • ½ tsp ground cinnamon
  • ½ tbsp tomato paste
  • 300g cherry tomatoes, halved
  • 1 tbsp double cream
  • 5g coriander leaves, roughly chopped
  • Fine sea salt
